You just gotta try this!


This chicken taco soup recipe is so adaptable to what you prefer or have in the pantry. It is one of my favorite soups that I frequently take to work. It’s different from a similar recipe because it uses chicken rather than beef.

1 can Rotel
1 can corn (not drained)
1-2 cans white hominy (not drained)
1 can pinto beans
1 can red kidney beans
1 pkge taco seasoning
1 pkge HV Ranch dressing
2-3 cups water
2 cans white chicken breast (drained)


Notes:

Don’t let the hominy scare you if you are not a fan of it. Please
(I beg you!) try it.

Feel free to adjust the amounts of taco seasoning and Ranch dressing.

You can’t mess this one up!

And……..it’s healthy and low fat!!!!!!

Hey, aren't you impressed? I do have recipes that aren't dripping in calories and fat!

  1. That's so funny that you lost me at the hominy then got me back at don't let the hominy scare you. Recipe sounds loaded with protein and spice. Two of my favorite things.

  2. Looks like you like hominy. I have a recipe for pasole. It uses pork. It's a very good soup, if you'd like the recipe. I thought it was on my blog, but I can't find it. Might be that I just didn't link it up.

  8. I've been making taco soup for ages and love it! Sometimes I make it with beef, sometimes turkey, and sometimes chicken. If you ever have leftover rotisserie chicken, try it with that!
