In The Kitchen



Ever since I got a new mixer, baking cookies has gotten so much easier! These are Ranger Cookies. Try them and enjoy!

1 c. Crisco
1 c. sugar
1 c. brown sugar
2 eggs
1 t. vanilla
Thoroughly mix all the above.

Gradually add:
1 c. crushed Wheaties
3/4 to 1 c. oatmeal
3/4 c. nuts
3/4 bag chocolate chips
1 t. baking soda
(Can adjust the amounts of cereal, nuts, and chips to your preference.)
Bake 375 degrees for 9-10 minutes.






Next try this Quiche Lorraine that I just made for the second time. Sooo good!

4 eggs
1 can evaporated milk
1 T. flour
1/2 t. salt
1/4 t. pepper
1/4 t. nutmeg
1 chopped medium onion
1 1/2 c. swiss or mozarella cheese
3/4 lb. bacon
Preheat oven 350 degrees. Blend all ingredients and pour into a deep dish uncooked pie crust. Bake approximately 50-55 mins.

Great hint: I didn't have bacon on hand today. So I used a bottle of real bacon bits. Super easy and tasted yummy! 

Even Rick likes it. I will tell you the first time I made it I just told him it was a new casserole recipe. Didn't use the word "quiche." Knew that would kill its chances!
